Our short courses, from 5 to 12 weeks, are specialised and cruise oriented. Batches run throughout the year, for those with prior hospitality qualifications or experience and also, in some instances, for freshers. The only common communication language on the cruise is English, hence the courses are conducted in English only. Students must know ensure they can understand and speak in English. The pass grade for all subjects in each course, including Communication Skills, is 70%.
BSc. CULINARY ARTS & CHEF MANAGEMENTDuration: 3 YEARS
The 6-semester graduation program of Alagappa University, Karaikudi is for candidates who have passed 12th standard and are aspiring to become professional chefs. The course includes 6 months of industrial training at leading 4-5 star hotels/fine dining restaurants to get hands-on experience in managing multi-lingual clients, organising food festivals and related events.
The curriculum includes practical training, including exposure to raw materials as they are used on the cruise ship, covering global cuisines, pastry arts, garde manger and also various management subjects.

DIPLOMA IN PROFESSIONAL COOKERYDuration: 18 MONTHS
This course in professional cookery is affiliated to BSS promoted by Govt. of India, includes 6 months of industrial exposure training at leading star hotels. Candidates of 10th pass or 12th pass/fail are eligible for this intensive practical oriented program meant for a strong foundation in culinary skills.
The curriculum includes intensive practical training in gastronomy right from fundamentals to intermediate and till advanced level in culinary. Safety, Hygiene and Sanitation, Food Science and Nutrition, Communication Skills and Personality Development & Fundamentals of Computers are other ancillary subjects of this course.

CRAFTSMANSHIP COURSE IN BAKERY & CONFECTIONERYDuration: 12 MONTHS
An intensive job oriented skills program in bakery & confectionery aimed at school leavers. Affiliated to BSS promoted by Govt. of India, the course includes 6 months of training in a star hotel or well-known bakeries. Minimum 10th pass is the requirement for this program.
The curriculum includes fundamentals to a professional level in bakery & confectionery. Food Science and Nutrition, Hygiene & Sanitation, Communication skills and Personality Development are the ancillary subjects of this course.

CRAFTSMANSHIP COURSE IN FOOD & BEVERAGE SERVICEDuration: 6 MONTHS
The food & beverage service course is for those who wish to start their career as waiter/waitresses, hostess in fine dining restaurants, specialised themed restaurants in star hotels and in QSR’s. The course includes 3 months of industrial exposure training.
Candidates should be minimum 10th pass, good spoken English and have a pleasing personality.
Age limit: 18 – 28 years
